Butter Crunch Lettuce, Carrots, Long Melon (AKA: Opo Squash, Bottle Gourd or Calalbash), and Chinese Green Beans (Yardlong Bean) are just few items growing in local gardens. Items such as kale, collard greens, and baby bok choy can also be grown and provide vitamins and fiber to a balanced diet.
